Our ingredients are a combination of locally sourced from partners at, Pavelka's Point, Farmer's Hen House, Organic Greens, and El Milagro Tortillas, and top quality ingredients from Certified Hereford Beef and Fortune Fish Co.

Chef Heskeith Flavien developed his love of flavor growing up on the small Caribbean island of St. Lucia. He moved to Louisiana in 2000 where he attended culinary school and began his career.  He has 10 years of experience in Caribbean, Southern, and Modern American cuisine and brought his passion for creating flavorful, complex dishes to Iowa in 2015. He comes to Saloon with a broad experience in restaurant, bar, and catering. He is eager to put his spin on Saloon’s Southwestern cuisine.
